Sweet Peach Salsa

Happy Friday everyone! Short and sweet for you here today.

If you’ve seen my Instagram feed lately, you’ll know I love fruit (and veggies too!), particularly peaches. Thanks to a friend, I was introduced to Tree Ripe Citrus Co. which is a traveling market of sorts that brings fresh Georgia peaches and Michigan blueberries to my local area by truck a few times throughout the summer. I don’t think peaches and blueberries can get much better than what I’ve purchased from Tree Ripe. I highly recommend checking them out if you’re WI, IL, MN or IA!

Because I purchase a few half bushels of peaches throughout the prime months of the summer, I eat them like crazy. I cook, bake and create with them in many different ways. Last summer when I was pregnant with Sylvie, I couldn’t get enough peach pie/cobbler, particularly with vanilla ice cream.? I do make a variety of peach-inspired dishes though! One of my favorite creations so far this year is a sweet peach salsa. This recipe is so easy, incredibly delicious and is perfect for the summer weekend ahead.


Sweet Peach Salsa

  • Servings: 4 cups
  • Time: 30 minutes
  • Difficulty: easy
  • Print

Ingredients

6 Ripe Peaches
1/2 Red Onion
1/4 c. Cilantro
2 tbs. Lime Juice

Directions

Peel and remove pit from peaches. Chop into small pieces approximately 1/4 inch in size. Rinse and dice red onion. Chop cilantro. Place all ingredients in large mixing bowl and pour lime juice over top. Stir gently.

Serve chilled with tortilla chips.

Enjoy!

If you’re staying in and making this for yourself, you’ll feel like you’re at a five star restaurant. If you’re serving this to guests, they’ll want to know what your secret is. It’s SO good. Feel free to play around with the amounts of ingredients. I’m never opposed to adding more cilantro to anything ☺️
